I accidentally skipped the tutorial for dueling and have beaten the game, winning some duels with dumb luck. Can someone explain to me the mechanics of dueling and what buttons to press?

When it says 'Draw' i pull the Left trigger and with the right stick move the on screen crosshair towards the guys head and then tapp right trigger a bunch of times

Right, mate. This is what I gather from experience, along with the rantings of others in the Post-Release Forum. They know who they are and God bless them all (if we didn't live in a cold and empty universe):
Draw using L2 or, for more fun, down then up on the Right thumbstick. Fire with R2.
Drawing before entering Dead Eye is considered cheating and you will lose fame. You're a bad man.
Drawing before your opponent will give you faster and less accurate shots. The longer you wait to draw, the more the screen zooms in, increasing your accuracy.
You need to fill up your bar (bottom right of the screen) before your opponent. You can do this one of two ways, I think: Placing shots or getting a disarm.
The cross-hairs oscillate between red and white, white being the most pin-point accurate. Getting a white cross-hair on their gun will fill up your bar instantly. They lose the gun and the duel, whilst you will gain honour.
That's the best I can do. I've used this advice and, so far, I've only lost one duel... How man have I...? Well... five. Yeah? Well screw you, too, buddy!
