Now this may be a bit of a leap, but I feel like there is a lot of fun to be had.
I am assuming this, but let's say in free mode in multiplayer you can drink in the bars and let's assume that when you get drunk it is similar to the way it worked in GTA IV. If the drinking does work like that, I would love to gather the Posse for drunk duels or drunken horseback races. Even all out drunken battles. Hunting bears drunk.
Basically, anything you want to do in the multiplayer free roam, do it drunk.
